Whole grain Cranberry Orange scones in a food processor made easy

These delicious scones are suitable for breakfast or tea in the afternoon. Whole grains that are not only included provide nutritional value; You actually add a savory, nutty background taste that goes well with honey and orange flavors.

A food processor is the best tool, if each Scone recipeto make. It does all the hard work for you, often with better results than by hand.

Ingredients for 12 scones:

10 Ounces whole wheat flour (the about 2 1/4 cups)

4 Teaspoons baking powder aluminum free

1 / 4 Teaspoon baking soda

1 / 4 Teaspoon sea salt

2 Tablespoons olive oil extra vergine

2 Tablespoons cold butter (1 / 2-stick) or solid vegetable shortening

1 Tablespoon minced orange zest

2 Tablespoons honey

3/4 Cup milk

1 Cup dried cranberries, coarsely chopped

Turn the dough on a floured board or work surface, and split into two parts. Work quickly each in a circle, about 3/4 inch thick, dusting easy this is with flour also sticky to work with. Cut each circle into 6 even pie shaped wedges and transfer to a baking sheet with parchment paper lined. Bake for 12-16 minutes, or until golden brown are.

Tips and suggestions

Serve for a special treat with fresh home-made butter (its easier than you think with a food processor!) If additional sweet you want, drizzle with honey.

It is to note a few things in each pastry. Their dough must be cold, to make sure that the butter melting be prematurely. That is, at least, your butter must be well chilled. It is advisable on hot days, chill the flour. Over mixing causes a hard Scone. Once fetched the wet and dry ingredients together, sure to mix so little as absolutely necessary.

Easy Cider Roasted Vegetables Vegan and Gluten Free

A pan of fresh vegetables ready for roasting
Roasted vegetables are an easy, fit for company favorite.

Roasted vegetables. As you may have guessed from my last recipe, they are a favorite staple at our house. And beyond easy. We make them at least twice a week- a convivial ritual. Steve and I join forces in the kitchen at dinner hour and cut up heaps of vegetables and talking politics. Or religion. Human behavior. Projection. Affect and temperament. All those spiky topics your grandmother warned you not to talk about at dinner parties (or at least in mixed company). We talk, all right. And talk.

After all, were simpatico.

Were on the same ethical and moral page. We share the same values (muy importante in a marriage, let me tell you). And were on safe ground here in our tiny desert kitchen- at least as long as the bank holding the mortgage doesnt go belly up (but money is another topic a "polite" woman doesnt discuss).

Steve and I are as fearless and hopeful with another as we were on our very first date- a cup of coffee (make that three) at Jacks Out Back in Yarmouthport. When he asked me where I saw myself in ten years- and told me he wasnt looking for a mother- I knew Id found the man for me.

And last night- the one year mark of the unfortunate hip incident- as we stood in the very spot of my Charlie Brown smack down, rustling up passionate discourse and tossing veggies left and right into a waiting roasting pan and punctuating Mamet style pauses with. Glugs. Of olive oil. And. Pinches of sea salt. My husband slid the pan into the hot oven. And kissed me.

Dinner is done, he said.

May this election soon be, I murmured.

And I raised my glass to the future.

Easy Cider Roasted Vegetables Recipe

While the veggies are roasting their earthy little hearts out, getting all golden and tender and sweet, put on a pot of your favorite brown rice or quinoa seasoned with a little olive oil and a sprinkle of curry, cumin, or Old Bay Seasoning.

Preheat the oven to 375ºF.

Wash and cut your favorite mix of vegetables and toss them into a large baking pan. Mix and match. Some folks worry about pairing the wrong vegetables but honestly, Ive never had a problem combining. Just make sure you cut the assorted veggies in an evenhanded manner, keeping the sizes relatively close. Denser vegetables like carrots I usually slice thinner, knowing theyll take a bit longer to cook through.

Ingredients:

1 sweet or red onion, cut into wedges
2 carrots, sliced
6 baby gold, purple or red potatoes, cut up
1 1/2 cups butternut squash or pumpkin, peeled, cubed
Half a cabbage- green or purple- sliced
1 1/2 cups broccoli florets
1 cup cauliflower florets
1 yellow squash, cut into half moons
A few green beans, whole, trimmed
A portobello mushroom or two, sliced or cut up
Lots of garlic, several whole or minced cloves

Instructions:

Toss the vegetables into a large roasting pan. Season the veggies with sea salt and fresh ground pepper. Make your sauce.

Cider Roasting Sauce:

Ingredients:

3 tablespoons extra virgin olive oil

3 tablespoons apple cider vinegar
1 cup natural apple cider or apple juice
1 tablespoon agave, honey or brown sugar

Instructions:

Stir to blend. Pour the sauce over the veggies, toss well to coat.

Sprinkle with warming spices, if you like. Curry, nutmeg, a touch of cinnamon, some thyme. Roast for 30 to 45 minutes- or until the veggies are tender, to your liking.

Serve over cooked brown rice or quinoa. Add a condiment for more protein- hummus is especially delicious with roasted vegetables.
Add crumbles of goat cheese, if you like.

More Options:

Add a can of drained white beans or chick peas for added protein; stir them into the vegetables during the last 15-20 minutes of roasting, to heat through.

Leftover roasted veggies can be baked into yummy quiches and frittatas or tossed into soups.

Omnivores can add in sliced cooked sausage or pieces of cooked chicken during the last 20 minutes of roasting; heat through.

American French Onion Soup – Easy Just Got Easier

French onion soup is a very easy recipe. So, it’s a little ironic that this American French onion soup is an attempt to make things even easier. Then again, taking ideas that don’t need improving, and changing them anyway, is a time-honored American tradition.

Instead of going “French” on the onions, and cutting thin slices, we’re doing more of an extra large dice. I like the flavor and texture this cut provides, and there’s no danger of being chin-slapped by a long, steaming strand of onion.

To make the caramelizing step a bit easier, we’re going to use the oven. You can just toss the onions in, stir it once in a while, and wait for them to brown. You don’t have to stand there and watch as closely as you would on the stovetop, and since the oven is blasting the pan with heat from all sides, you get a nice even color.

The last Americanization is a departure from the classic gruyere cheese. My love for gruyere is borderline inappropriate, but keeping with the theme, I decided to go with a 50/50 blend of extra-sharp New York cheddar and mild Monterey Jack. It was wonderful, and a nice change of pace.

Regarding the ominous vinegar warning in the video – I think a little touch of sherry vinegar really balances the flavors perfectly, but like salt, everyone’s palate is different. So, if you haven’t used it before, it may be a better to just add the vinegar, to taste, to the finished soup. Drip a little in, taste, and adjust.

Anyway, spring weather means plenty of cool, rainy days, and what better way to enjoy those than with a nice bowl of onion soup? Whether American, French, or some other yet-to-be-discovered cultural variation, I hope you give this a try soon. Enjoy!

Ingredients for about 2 1/2 quarts of soup:
6 large yellow onions, cut in large dice
1/2 stick unsalted butter salt and pepper to taste
3-4 sprigs fresh thyme
1 or 2 tsps sherry vinegar, or to taste
3 tbsps dry sherry wine (do NOT use “cooking wine”)
4 cups high-quality beef broth
4 cups high-quality chicken broth
buttered croutons
shredded extra-sharp cheddar and Monterey Jack cheese (you’ll need about 1/3 cup per bowl)

Fast and Easy Peach Strudel Forced to Use Frozen Puff Pastry Once Again

There are two ways to make strudel, the right way, and the way I make it in this peach strudel video recipe. This fast and easy version uses puff pastry, instead of the homemade dough thats stretched paper-thin over kitchen towels, and rolled up into the multilayered masterpiece invented in Austria centuries ago. While Austria gets credit for its origins, the word "studel" is German, and most consider this to be a German pastry.

Back in culinary school I remember being so excited to learn we were going to be taught this impossibly flaky, and airy puff pastry. We rolled and folded, and rolled and folded in all that butter, and when we were done our puffy pa
stry looked nothing like the stuff the chef had made. Mine was flat, tough, and so not flaky.

So, like most cooks do, I eventually resigned myself to the fact that puff pastry would just be one of those products I would be forced to buy. It was something that was going to take more practice time to perfect than I had to devote - especially for something I would use only occasionally.

If you are in a big city, you may find a bakery or patisserie that sells it frozen. But, if not, take comfort that every frozen food case in the country has boxes of Pepperidge Farms puff pastry. Its a decent enough product, and when used to wrap up a filling this delicious, no one with any decency will complain. Just dont invite any Austrians over. Enjoy!

It’s Easy Being Green Hummus

This simple, basil-spiked “green” hummus is a great summer twist on everyone’s favorite spread. While making your own hummus is quite simple, as you’ll see, I completely understand why people don’t. Those big, ready-to-serve tubs at the grocery store are tempting when you’re party shopping and short on time.

But, if you do have an extra 10 minutes, and access to some fresh, sweet basil, this version will provide a great change of pace from the standard wake-me-up-when-it’s-over hummus recipes.

I didn’t mention it in the video, but as great a chip dip as this is, it’s also a world-class sandwich spread. Turkey on wheat? Yawn. Turkey on wheat with green hummus? Hello! And, don’t even get me started on wraps. I won’t even touch a wrap that doesn’t contain hummus, and neither should you.

Fresh basil should still be in good supply, and what better way to enjoy its fragrant flavor than this delicious dip? I hope you give it a try soon. Enjoy!

Ingredients:
1/3 cup packed blanched fresh basil leaves
1 (15-oz) can white beans, drained
1 (15-oz) can garbanzo beans, drained
4 cloves chopped garlic
1 or 2 tablespoons fresh lemon juice, or to taste
3 tablespoons olive oil (1 to start, 2 to finish)
salt and pepper to taste
