Gluten-Free Cheddar Pasta Bake Recipe
For those cooking gluten-free pasta for the first time, the trick is to not over-boil it- keep it very al dente, as it continues to cook in the cheddar sauce. If you'd like to make this a one-dish supper, add broccoli florets to the pasta before you bake it. Cornbread crumbs make a tasty crunchy topping.

Mamacello Pasta
I have made this dish a couple of times and found in my old files on my computer. I dont think I posted it because I felt that it didnt photograph well. I decided that the recipe is definitely blog worthy even if the photo isnt. Rachael Ray makes this with spaghetti or linguine but Steve and I are very big fans of rigatoni and I make it all the time. Whats your favorite type of pasta?

June-July 2006
4 SERVINGS
Ingredients:
1 pound spaghetti or linguine
Salt
3 tablespoons extra-virgin olive oil (EVOO), 3 turns of the pan
4 garlic cloves, finely chopped
2 pinches of crushed red pepper flakes
1/2 cup dry white wine (a couple of glugs)
Zest of 2 lemons, 1 lemon juiced
1/2 cup heavy cream (eyeball it)
Handful of flat-leaf parsley, chopped
1 cup fresh basil (20 leaves), shredded
Freshly grated Parmigiano- Reggiano or Pecorino Romano cheese, for topping the pasta and passing around the table
Directions:
1. Bring a large pot of water to a boil. Add the pasta and salt the water liberally. Cook the pasta until al dente, 6 to 7 minutes.
2. While the pasta cooks, heat a deep skillet over low heat and add the EVOO, 3 turns of the pan. When the olive oil is warm, add the garlic and red pepper flakes. Turn off the heat and set the garlic aside for 5 minutes, then raise the heat to medium, add the wine and lemon zest and boil to reduce the wine by half, about 3 minutes.
3. When the pasta is just about cooked, add a ladle of starchy pasta cooking water to the skillet with the sauce and stir in the heavy cream. When the cream is warmed through, whisk the lemon juice into the sauce and season with salt. Drain the pasta and toss with the sauce, then let the pasta stand for 1 minute so it can soak up a little of the sauce and lots of flavor. Toss with the parsley, basil and a couple handfuls of grated cheese, then serve immediately. Pass around the extra cheese at the table.

Pasta with Chicken and Broccoli and A Happy 30th Bday to Steve!
Ive been so busy this past week with Steves birthday that I havent had a chance to post but I have been taking pictures. Let me start by wishing my other half, Steve, a very Happy Birthday! I love you! XOXOXOX
Now about the food. While visiting with Steves parents this past weekend I noticed a cookbook on the bookshelf that I have never seen before. Its called "Eat Right, East Well - The Italian Way" by Edward Giobbi and Richard Wolff, M.D. There are a ton of wonderful recipes in this book and I look forward to trying more. I made very slight variations to the recipe because I wanted to use what I had on hand but nothing that really would compromise the end result. This recipe can be found on page 138-139 of the cookbook.
Pasta with Chicken Breasts
Serves 6-8
Ingredients:
1 whole chicken breast, cut into strips about 1/2 inches wide and 3 inches long
1 teaspoon minced garlic
1 tablespoon soy sauce
Freshly ground black pepper to taste
Juice of 1/2 lemon
3 tablespoons olive oil
Salt to taste
3 medium potatoes, peeled and cut into bite-sized pieces
1 pound tubular pasta, such as ziti, rigatoni, or penne
6 cups broccoli cut into bite sized pieces
3 tablespoons pesto (page 426)
Directions:
Marinate cut-up chicken breasts with garlic, soy sauce, pepper and lemon juice for several hours.
Heat the oil in a saucepan. Remove chicken from marinade and cook for several minutes over high heat. Add marinade and cook, tossing, for 10 seconds or more. turn off heat and set aside.
Bring a large pot of water to a rolling boil and add salt and potatoes. When water returns to a boil, add pasta. Stir, cook about 4 minutes, then add broccoli and cook until pasta is done al dente. Drain. Reserve some of the water - 1/2 to 3/4 cup - and mix with the pesto until it has a thin saucelike consistency. Add to pasta and vegetables in a large serving bowl. Add chicken and juices and toss.
Pesto - page 426
Ingredients:
5 tablespoons good olive oil
1 cup walnut meats
4 cups tightly packed fresh basil
3 tablespoons chopped Italian parsley
salt and freshly ground black pepper to taste
Directions:
Place all of the ingredients in a food processor and blend. Put in a jar, add 1/2 inch oil on top of pesto , and refrigerate. It will last all winter.
My changes were simple. I did NOT use this recipe for pesto. I included it here because it is a part of the recipe and I want you to have the option. I have my own recipe for Pesto but I didnt follow that either because I didnt have a lot of basil. So I basically just added the basil I did have (less than a cup), 1/4 cup parsley, 1 clove garlic, 1/4 cup pine nuts, 1/4 cup romano cheese, 1/2 tsp salt and extra virgin olive oil. I used my normal recipe as a guide and used less since I didnt have a lot of basil. It worked and it was delicious. So dont be afraid to make this if you dont have pesto or dont have all the ingredients for pesto.
When I cooked the broccoli it broke down a lot, almost to the consistency of the broccoli in a broccoli soup, so to me this was almost like a broccoli pesto. I loved that and I think thats the way its supposed to be but then again there was no picture so I dont know for sure. Either way, I liked this dish the way it came out and I would definitely make it again.

Summer One Pot Pasta
*I actually used 16 oz. of thin spaghetti and it worked great - you may need to add a bit more water and reduce the cooking time if you do this. If you use the linguine as it calls for, just follow the recipe as is. And I know 2 cups of onions sounds like a lot, but it gives it great flavor!
One-Pot Pasta
12 oz. linguine*
12 oz. cherry or grape tomatoes, halved
1 onion, thinly sliced (about 2 cups)
4 cloves garlic, thinly sliced
1/2 tsp. red pepper flakes
2 sprigs (about 10 leaves) basil, chopped, plus more for serving
2 T. olive oil
4 1/2 c. water
coarse salt and freshly ground black pepper
freshly grated Parmesan cheese, for serving (optional)
Combine pasta, tomatoes, onion, garlic, red pepper flakes, basil, olive oil, and water in a large straight-sided skillet. Bring to a boil over high heat. Boil mixture (uncovered), stirring and turning pasta frequently with tongs until pasta is al dente and water has nearly evaporated, about 9 minutes. Season to taste with salt and pepper. Garnish with additional basil and serve with Parmesan cheese.

Chicken and Leek Pasta Bake

After all the Easter feasting, there are always the leftovers. I love leftovers the offer up the chance to experiment and create something from the bits and pieces that lurk in the fridge.
We had chicken on Saturday and Lamb on Sunday and as our visitors had to call off at the last minute, we have rather a lot of leftovers! The lamb has been made into a Shepherds Pie and a Lamb Curry but the chicken needed to be used today, so I rifled through the fridge and found some leeks, spring onions, Dijon mustard and half fat creme fraiche.
Chicken and Leek Pasta (serves 4)
Meat stripped from 1 cooked chicken breast
Meat stripped from 1 cooked chicken leg
2 leeks, cleaned and finely chopped
3 spring onions, finely chopped
300ml of half fat creme fraiche
a couple of handfuls of frozen peas
juice of half a lemon
1 tbsp Dijon mustard
1 tsp olive oil
6 nests of tagliatelle
salt and freshly ground pepper
grated Parmesan or Gran Padano cheese to taste
In a large frying pan or saute pan, heat the olive oil and gently cook the leeks and spring onions until soft. Add the cooked chicken and heat through, add the frozen peas and set aside.
Cook the tagliatelli in a pan of boiling water until just cooked. Drain, leaving a little of the cooking water in the pan and set aside.
Add the creme fraiche, mustard and seasoning to the leek and chicken mixture and season to taste.
Mix the chicken mixture through the pasta and pile into an ovenproof dish, sprinkle over the grated cheese and put in an oven at 200C for about 10 minutes until brown and bubbling.

Roasted Eggplant Tapenade Pasta Sauce
![]() |
Roasted eggplant tapenade also makes a delicious pasta sauce. |
Yesterday was summery here in Southern California. In a Meg Ryan
breezy kind of way- not in a sultry no air peel off your jeans, cowboy boots and socks Jennifer Lopez in U Turn kind of way. Nope. Sunny and warm it was- but not hot like New Mexico.
We've moved into our sublet (above one of Santa Monica's most famous vegan restos). The Honda is Cuisinart and bread machine and wooden spoon free again- after lugging armloads of bags and boxes (via elevator, thank goddess) up to our cozy fourth floor cutie. Yesterday we walked to the ocean, inhaling deep. In truth? I am exhausted. Running on gluten-free fumes. Too tired to shop or cook or make even the tiniest decision, never mind attempt to be clever and insightful and entertaining in a recipe post.

Shrimp Pasta Shells Salad – And They incorrectly Called It Macaroni
Macaroni is a specific type of elbow-shaped pasta, so while all macaroni is pasta, not all pasta is macaroni. Raise your hand if you missed that one on your SAT. Anyway, now that I have enough “macaroni’s” in here for the search engines, we can move on.
Actually, there’s not a lot left to discuss. This is a very straightforward, and quite adaptable recipe. I list a few potential additions in the video, but this is the kind of thing you can really make your own. Hey, you could even do it with macaroni. I hope you give this easy, and crowd-pleasing summer salad a try soon. Enjoy!
Ingredients for 8 portions:
For the dressing:
1 1/4 cups mayonnaise
2 tsp Dijon mustard
2 tsp ketchup
1/4 tsp Worcestershire sauce
1 lemon, juiced
1 tsp salt, or to taste
cayenne to taste
1/4 cup chopped fresh dill
The rest:
12-oz package pasta shells
1 pound bay shrimp, or other small cooked shrimp, drained well
1/2 cup small diced red bell pepper
3/4 cup diced celery
salt and pepper to taste
