SWEET CHERRY COFFEE CAKE
This coffee cake is sweet, moist and perfect for Sunday morning. I made it with frozen dark sweet cherries, but it works just as well with fresh raspberries.
2 cups frozen dark sweet cherries (thawed and drained well)1/4 cup + 2 tablespoons brown sugar
1/4 teaspoon almond extract
2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
½ cup butter room temperature
½ cup sliced almonds
1 cup sugar
2 eggs
2 teaspoon vanilla
½ teaspoon almond extract
1 cup sour cream
Thaw and drain the frozen dark sweet cherries completely (I put them in a colander overnight in the fridge). The next morning, drain completely, cut the cherries in half and mix with the brown sugar and almond extract. Set aside.
Beat butter till creamy, add sugar and beat until fluffy. Add eggs, one at a time, add extracts and sour cream, mix well. Add dry ingredients and beat until smooth.
Spread 2/3 of the batter into greased 9" spring form pan. Top with fruit and then spoon dollops of the remaining 1/3 of the batter, over the fruit, like this:
Sprinkle the sliced almond over the top of everything and sprinkle it with a little cinnamon sugar.
Bake at 350 for 40 minutes. Let the coffee cake cool in the pan for about 15 minute before removing it. Drizzle the cake with a simple vanilla glaze.
GLAZE
1/2 cup powdered sugar
2 teaspoons milk
1/2 teaspoon vanilla extract
1/4 teaspoon almond extract

IMPORTANT NOTE: When you thaw the frozen dark sweet cherries, you will get a considerable amount of "juice". DO NOT USE that juice in this recipe (save it for a different recipe). However, after they are drained and you mix the cherries with the brown sugar and almond extract (after it sits a few minutes) you will get even MORE "juice"...make sure you use this extra juice in the recipe.
IMPORTANT NOTE: This recipe calls for a 9" spring form pan, but you can make it in a regular 9" round cake pan. The spring form pan just makes for a prettier presentation. IF YOU USE A SPRING FORM PAN, make sure you wrap the bottom of the pan in foil, in case your pan does not have a super tight seal (I also set the whole thing on a baking sheet).

Hrærð terta A white cake with jam
This cake is simply called "Batter cake", which is certainly descriptive, but not very poetic. It is an excellent base for a cream cake - in which case forget the jam and use canned fruit instead and pour a little of the juice into both layers, pipe on whipped cream to cover the cake and decorate with fresh fruit.
1/3 cup butter or margarine, soft
1/2 cup sugar
3 eggs
1 cup flour
1/2 tsp baking powder
1/2 tsp. vanilla essence (this is my addition to the original recipe, as I think that without it the cake tastes eggy)
Separate the eggs. Whip together the softened butter and sugar until light and fluffy, then add the egg yolks and mix well (and add the vanilla if using). Mix together flour and baking powder and add to the batter little by little. Whip the egg whites until stiff and fold into the batter with a spatula.
Pour into 2 round 20 centimeter/8 inch baking pans with loose bottoms and bake at 175°C/350°F (regular oven) until the cakes area rich golden colour, if possible with more bottom-heat than top-heat (if your oven doesnt have that setting, dont worry). No baking time is given in the original recipe, but it took 15 minutes in my convection oven at 165°C/330°F.
Turn out of the pans onto baking paper sprinkled with sugar, and allow to cool (original recipe), or turn out onto a cake rack and sprinkle sugar directly on the top of one layer while it is still hot (my suggestion). Sandwich with jam when cooled, putting the sugared layer on top.
This makes a cute little cake. The original recipe calls for 3 layers, in which case I suggest using 12 or 15 centimeter/5 or 6 inch pans so the layers will not be thin as pancakes.
I used strawberry-rhubarb jam when I made it, but I think strawberry or raspberry jam would probably be the best for this cake. I can also imagine it would be quite delicious layered with chocolate fudge icing.

Savory Spinach and Feta Cake Ispanaklı ve Beyaz Peynirli Kek

In several previous posts I have mentioned the importance of afternoon tea time in Turkey and the snacks that we would have with our tea. This cake is a total green deliciousness that my mom used to make for our lazy afternoon tea hours. Years later during another tea gathering with her friends she learned a recipe for sweet spinach cake (I know it sounds weird, but it doesnt taste anything like spinach. Spinach is there just to make it green and distract the ladies from gossip by causing curiosity for the source of its color), and unfortunately stopped making this one. I never cared much about sweet cakes, so this one is definitely my most favorite green cake.
As you can see from the ingredients, it is a very flexible cake. You can add more herbs or take out the ones you dont like; use feta or grated mozzarella or cheddar; use crushed pepper flakes and make it spicy or very spicy. Its all up to you. Because of the spinach puree and the amount of flour this is a moist, spongy cake, not a dry one.

serves 6-8 people
1 lb spinach
2 cups flour
1 cup oil (olive, canola, or vegetable; I used half olive and half canola)
3 eggs
1/3 cup Turkish white cheese or feta cheese, crumbled
1/3 cup black olives, sliced (you can use canned olives but they wont bring any flavor to your cake)
1 green bell pepper or 2 green chili peppers, fınely chopped
2-3 green onions, finely chopped
1/2 cup fresh dill, chopped
1/2 cup flat leaf parsley, chopped
1 tsp oregano leaves
1-2 tsp salt (depending on how salt the cheese is)
2 tsp baking powder

-Put washed spinach in a food processor with a couple of tbsp of olive oil and make into a puree. You should have approximately 2 cups of spinach puree.
-Beat 3 eggs with salt in a mixing bowl until it doubles in volume.
-Add remaining oil, spinach puree, dill, parsley, peppers, green onion, sliced olives, and cheese to eggs and mix with a spoon.
-Add flour and baking powder to this mixture and mix.
-Grease a baking pan, any shape you prefer, with butter. Pour the mixture and bake in a preheated oven at 350-360F for 45-50 minutes. Baking time might vary with different shapes and ovens. Check with a knife or wooden skewer/toothpick.
Wıth all its greenness this is my contribution to Weekend Herb Blogging that was started by Kalyn of Kalyns Kitchen and is now organized by Haalo of Cook (almost) Anything At Least Once, and is hosted this week by Katie of Eat This.

Pear and raspberry almond cake recipe gluten free vegan

Chef has baked a lovely pear and raspberry cake recipe in the kitchen.
A soft yellow almond sponge bottom with a moist and fruity raspberry almond top with sliced pears to finish the cake off perfectly.
The fruit and almond combination flavours of this cake taste beautiful, you have an almond sponge cake texture at the bottom and a gorgeous moist raspberry cake on the top layer, the bottom and sides of the cake have a tasty scone type taste and texture as the cake is twice baked.
Chef uses canned fruits to bake this cake so there is no need to be blending fresh fruits for the juices as the fruit juices from the tins help to moisten the cake.
Once the cake is initially baked the cake is then turned upside down and placed back into the oven for a short time to just take the excess moisture from the raspberry layer of the cake.
Chefs pear and raspberry almond cake recipe is not only gluten free, egg free and vegan but it is a beautiful cake to impress with visually as the pink and purple top layer contrasts against the yellow almond sponge bottom.
This was such a delicious cake to eat and an absolute delight to bake.

Pineapple coconut cake

Quick and Easy Pineapple Coconut Cake
white cake mix
large can of crushed pineapple
8 ounce container of whipped cream
flaked coconut
Mix white cake mix and large can of crushed pineapple together, liquid included. You shouldnt have to add anything else to the cake mix because it will be moist enough.
Bake according to package directions.
When cooled, combine the container of whipped topping and as much coconut as you like. Pile on the cake and enjoy!
This is really yummy, and gets better after the first day, in my opinion Its really nice on a warm day since the cake has to be refrigerated.
Thanks!
Tracy
