Everythings Coming Up Rainbows!
I dont know if whats gotten into society, but everywhere you turn it seems things are going well:
1. Prop 8 was finally denounced as unconstitutional, which makes this totally okay.
2. This dude spots a literal double rainbow among the Yosemitebear Mountains and officially beats out Adam Lambert as most feminine man alive.
3. My friend Anna introduces me to what will probably go down in history as the best video game ever known to man: Unicorn Robot Attack. Its exactly what it sounds like.
It doesnt take a girl from Kansas to figure out whats going on here...rainbows just make people happy!! Cupcakes make people REALLY happy. Therefore, rainbow cupcakes make people so freaking psychedtheycanteventakeitlikeomgijustwannadieeeeimsooohappyyyyywheeeefdlksdjlk!!
Nobody really captures this sentiment in cupcake form quite like Lyndsay at Coco Cupcakes. Try to look at these and not crack a smile--I dare you!

Not only is the vanilla cake tie-dyed, but so is the frosting AND the liners. Just sensational!
Not to be outdone, Flickr user ovenhaven made these vanilla frosted rainbow cupcakes:
Kinda reminds me of those colored sand tubes you made as a kid, right?
And finally, Flickr user {Whitney} brings it all home with these striped fruit chew rainbow decorations:

I bet eating a real rainbow is like eating fire.

This Will Cheer You Up
Welcome to Depression Cooking with Clara. Clara is 91 years old, and since she experienced the Great Depression first hand, shes decided to show the country how to cook her favorite childhood meals, you know, just in case.
With the state of the economy such as it is, and fears of another depression looming, you would think these videos would be rather disturbing, but theyre not. As she cooks the food that kept her and her family going, Clara shares her memories of those very hard years, but she does it with a twinkle in her eyes that leaves me optimistic. Enjoy.

Christmas Pudding for Stir Up Sunday
Its Stir Up Sunday today. The last Sunday before Advent and the day when, traditionally, you are supposed to make your Christmas Pudding to allow it to mature for Christmas.
Too posh? Not enough time? Dont know how? Cant be bothered? Well, I have good news for you... you dont have to make your own as there are some lovely Christmas puds out there that you can heat up easily, serve and enjoy!
And where better to get your Christmas Pudding than from Harrods, dahling! I wouldnt dream of getting mine anywhere else ;-) For a start, it arrives in this gorgeous box, with Father Christmas on his sleigh, pulled by reindeer, flying over the rooftops of Harrods.
Im going to have to find another use for the box as I really love it, Im sure it can be repurposed to hold some Christmas decorations or something equally festive.

When you open the box, you see that, not only do you have a Harrods Classic Christmas Pudding with Brandy, but also a bumper jar of Harrods Brandy Butter! The pudding has been 6 months matured for Christmas Day and is bursting with juicy Mediterranean fruits, Vositizza currants, cherries, almonds and walnuts blended with Thatchers Cider, one year old Brandy, Spanish Sherry and Rum! It only needs some gentle reheating, an hour of steaming or a 3 minute blast in the microwave. The Brandy Butter is 8% Courvoisier VS Cognac.
The pudding tastes just as good as homemade, its rich and fruity with nice sized chunks of nuts. It isnt heavy at all and you could get six small portions or four generous portions from this 454g pudding. The Brandy Butter is soft and delicious, melting gloriously over the warm pudding without overpowering it with too much spirit.
The Harrods Christmas Classic Hamper containing a 454g pudding and 210g jar of brandy butter costs £25 and I think it would make a great gift. There are lots of other Christmas Hampers and Food Hampers to choose from at Harrods, there is bound to be something for everyone.
I received the Harrods Christmas Classic Hamper to review, I was not required to write a positive review and I was not paid to write this review.

Grilled Tuna with Freshly Grated Horseradish Sauce – Giddy Up Taste Buds Giddy Up!
Whenever I hear people say you shouldn’t ruin fresh fish at the sushi bar by dipping it in copious amounts of wasabi-spiked soy sauce, I think to myself, yeah, but thats how I like it. Sometimes I just dont care about "overpowering the natural flavors," and this grilled yellowfin tuna with freshly grated horseradish sauce recipe is one of those times.
I saw a nice piece of fresh horseradish root on a recent trip to the market, and since I love the combination of salty soy sauce and searing, nasal-clearing wasabi, I decided to try a similar preparation with a couple grilled tuna steaks.
The recipe is very straightforward, and the only piece of special equipment you will need is a microplane-style grater, so you can turn the aromatic radish into a fine, white snow. As is custom, Ive listed my best guesses on the ingredient amounts below, but consider everything in this, "to taste." I didnt use citrus, as I went with the tomato slices, but that would surely work too.
By the way, I did a little research (very little), and read that some believe the term "horseradish" comes from the fact that horses were once used to crush the spicy roots under-hoof before being grated. Unless those were some very well-trained (and regular) horses, and they were wearing some kind of sanitary horse slippers, Im not sure that was such a great method.
If you dont find fresh horseradish, give this a try with finely grated ginger. I cant believe that wouldnt work quite well. Also, as I mentioned in the video, this same condiment would be lovely with all kinds of fresh grilled seafood. Enjoy!
Ingredients (for 2):
2 (8-oz) tuna steaks, lightly oiled
2 tablespoon soy sauce
2 tablespoon seasoned rice vinegar
1/2 teaspoon sambal chili sauce
1-2 tablespoons freshly grated horseradish root, plus more as needed
4 sliced sweet cherry tomatoes
1 tablespoon minced green onion to garnish
