FENNEL AND TOMATO RICE

Most of my blogger friends and readers know that I am crazy about fennel. I add fennel seeds in all the savory dishes. It is not only because I was taught to cook like that by my granny but also I think I must have inherited her love for fennel seeds. When making variety rice like these fennel seeds imparts a nice flavor to the dish. I love one-pot dishes like tomato rice. I have tried many variations to my favorite tomato rice by adding dill leaves and spinach. This time I tried adding some fennel and we did like this rice very much. Fennel was not too overpowering here and it was indeed very mild blending along with the onions. If you love the flavor of fennel, then you will love this dish!

I have made this rice with brown rice. These days everybody seems to be change to brown rice, many of my friends have stopped white rice completely and we too started getting brown rice only rather then white rice. This is a quite healthy trend indeed. I have used a short grain brown rice variety that I got from Costco. I think that brown basmati rice is the best choice for anyone switching over from white rice to brown rice to begin with. They seem to hold their shape quite well when making variety rice like briyani or tomato rice.

INGREDIENTS:

  1. Cooked brown rice, 1 cup.
  2. Ripe Roma tomatoes, medium-size, 3.
  3. Red onions, medium-size, 2.
  4. Fennel 1 medium-size bulb.
  5. Ginger-garlic paste, 1teaspoon.
  6. Green chilies, 1-2.
  7. Chili powder, ½ teaspoon.
  8. Coriander powder, 1 teaspoon.
  9. Turmeric powder, ¼ teaspoon.
  10. Mustard seeds, ½ teaspoon.
  11. Fennel seeds, ¼ teaspoon.
  12. Curry leaves and cilantro for garnishing.
  13. Salt as per taste.

PREPARATION:

Cook the rice separately and let it cool. The rice should not be mushy. Chop off the stalks from the fennel bulb and discard it. Dice the bulb into small pieces including some of the fronds from the stalk. Dice the onion and tomatoes and slit the green chilies into 2. Heat a pan with 2 teaspoons of oil. When the oil is hot enough, add the mustard seeds and let it splutter. Then add the fennel seeds and fry for 2 seconds. Add the diced onions, fennel, and curry leaves and sauté for a few minutes until the onions turn translucent. Now add the ginger-garlic paste, tomatoes, and green chilies and sauté for a few more minutes until everything is blended. Add the chili powder, coriander powder, turmeric powder, and salt and mix well. Cook closed under low flame for 5 minutes until the raw smell of the spices goes. Now add chopped cilantro and rice and mix everything. Let it sit under low flame and switch off the stove. Serve hot with raita or any spicy side dish.

TRIED AND TASTED: MALAR’S FENUGREEK RICE

This week I also tried Malar’s fenugreek rice and it was really delicious. I had used fresh methi leaves that I had grown in a small pot in my patio. This rice was very mild and went well with potato fry. Click here for the recipe.

Grilled Tomato and Eggplant Salad with Goat Cheese on Garlic Bread Crostini

I was anxiously anticipating, what I reluctantly believed to be, my final opportunity of the year to fire up my barely used Weber charcoal grill and gently grill this glorious T-Bone steak over a wood fueled fire to primal perfection. But, alas, the typical windiness of a late afternoon autumn day in northern Indiana almost foiled my farewell feast. Though I was hesitant to light the coal and allow the free flying ashes to set ablaze my mothers neighborhood which, like so many areas in this part of the country, is a tinderbox due to a serious lack of precipitation, I was glad to have the BBQ safety net that is the gas fired grill waiting on stand by.

To accompany this carnivores delight, some grilled veggies including eggplant, onion, tomato, mushrooms, and sweet red pepper. Chopped and combined with olive oil, balsamic vinegar, salt, pepper, chopped fresh parsley and fresh goat cheese, spooned over grilled garlic bread.  A simple spread made from butter, olive oil, a hint of lemon juice, a tiny pinch of cayenne pepper and a healthy sprinkle of salt all combined and schmeared, yes schmeared, all over a crusty French baguette and grilled to crunchy deliciousness.

Baked Cauliflower in Tomato sauce

Okay, so there are people who dont like cauliflower and some who dont like me posting recipes with cauliflower in them ;) If you are reading this, youll know this is for you!

Winter is officially over in Hyd with temperatures raring to touch 40 C. At such times, I still find spotlessly white head of cauliflower waiting to be picked up and used, so what else can I do but that? The idea for this dish comes a recipe I found in the book- From Bengal to Punjab : the cuisines of India by Smita Chandra - which has a very interesting collection of recipes and most of them are available on preview in the link above.
Ive tried the recipe Gobhi Mazedar from this book, which turned out superb. In fact, the hubby and me ate off the stuff from the baking dish and that was our dinner that night.

This time to pair with the pasta, I tried an Italian version of this dish - which turned out as good. In fact if you have a good loaf of bread on hand, you can dish out an excellent meal with just the bread and this baked cauliflower dish. There are two ways to do the dish - either deal with the cauliflower whole or break into large florets which will cook / bake faster if you are short of time.

---------------------------------------
Baked cauliflower in tomato sauce
Serves 4-6

Ingredients
1 large cauliflower roughly 750 grams - very fresh
10 medium tomatoes
2 tsp olive oil
3 medium onions
8 cloves of garlic
2 tsp chilli flakes
2 tsp oregano
2 tsp dried basil
salt and pepper
1/2 cup breadcrumbs
1/2 cup grated cheese of your choice (optional)

The Cauliflower
Remove the stalks of the cauliflower. Discard or reserve for another use.
If you have a pot big enough to hold the whole flower, then fill it with around 2L water. Add 2 tsp salt. Let it come to a boil. Meanwhile keep the cauliflower immersed in a large pot of salted water to remove any worms if present.
If you dont have a pot big enough or not enough time on hand, then break the cauliflower into big florets and keep immersed in salted water, until a pot of water comes to a boil.
When the water starts to boil, remove the cauliflower from the salted water and place it in the pot bottom down (if using whole). Cover and cook for around 10-12 minutes, checking until almost done. The florets will take shorter time, around 6-7 minutes, so keep a watch. Dont let them turn too soft.
Once this is done, drain, wipe thoroughly with tea towel and keep aside.

The sauce
Wash tomatoes well. Halve them and throw them in a pot. Let them cook in their own juices on medium heat. No need to add water. Stir around occasionally until they get mashed to a pulp. At this stage you could pass them through a strainer to remove the skins or keep it as it is (which is what I did). Remove and cool.
In a saucepan, heat 2 tsp olive oil. Add the cruches garlic cloves and sliced onions, stir until the garlic is light golden and onion is soft.
In a blender, place the cooled tomatoes, onion, garlic, herbs, salt and pepper - whir to a very smooth sauce. If you find this runny, which could happen if your tomatoes were very juicy, take this back in the saucepan and thicken with a slurry made from 1 tbsp flour and 1/4 cup water, simmer till thick and then proceed with recipe.

Assembling
Grease a 9" round baking dish. Place the cauliflower in it. Reserve 1/2 cup sauce to use while serving. For whole cauliflower, spoon the sauce between all the florets and whatever sauce remains, pour it and rub it over the top, so the flavours enter every nook and cranny.
For the florets, arrange the florets stem down - neatly in a baking dish that accommodates it all - pour the tomato sauce (reserving 1/2 cup) all over and around the florets, pressing well.
The dish can be prepared up to this stage, covered well and refrigerated for a day or two, to be removed and baked just before serving.

Baking
Cover the top of the dish with bread crumbs, cheese, extra herbs, pepper and bake in a 180 C oven for around 30 minutes, unthttp://www.blogger.com/post-create.g?blogID=23919567il cheese is melted and golden.

Serve hot along with a simple pasta (preferably not in a tomato sauce) or with slices of bread.

Please do try the original recipe Gobhi Mazedar. Youll enjoy browsing that cookbook online, it has a fantastic collection of recipes. Better still if you can lay your hands on it in your bookshop / library, you can see the book in its entirety. If the link does not work, you can try searching in Google ebooks for Smita Chandra Gobhi Mazedar.

This is a very hearty flavoursome dish which will make a great addition to your menu for an Italian party. I served this with Penne in Spinach sauce and the green and red complemented each other beautifully.

MOJO DE AJO! and Petite Filet Grilled Asparagus and Tomato Bruchetta

What, you may ask, is Mojo de Ajo and why does it have top billing??  Well, honestly, I had never heard of it until one life altering moment yesterday morning when I was mindlessly flipping through the channels and scanning my usual Saturday cooking shows.  Initially, I was a bit disappointed to find my very favorite "Mexico...One Plate At A Time" with Rick Bayless to be a rerun.  I reluctantly continued watching when I realized that I, in fact, had never watched this particular episode.  But, what was this Mojo de Ajo he spoke of?  I believe his exact descriptive words when describing this concoction were "pure gold" and "bling on a plate".   A perfect garlicky nectar created through slow cooking garlic in olive oil, lime juice, salt and hot pepper flakes until the garlic has softened in texture and flavor and perfumes the oil with a lovely tangy muskiness.

During the course of the show the uses for this garlicky deliciousness were seemingly endless from sauteed shrimp with pasta,  to a flavoring on freshly popped popcorn and in a sauce spooned over roasted fish.  Everything it touched seemed to be catapulted to a new dimension of flavor.  At the conclusion of the show, I immediately jumped in the car and rushed to the grocery to stock up on heads of garlic!

Slow Roasted Garlic Mojo     ... by Rick Bayless

Mojo de Ajo

Makes about 3 cups mojo de ajo (made with 2 cups of oil)
Recipe from Season 7 Mexico - One Plate at a Time

--------------------------------------------------------------------------------

4 large heads garlic
2 or 3 cups fruity olive oil
1 teaspoon salt
1/2 cup fresh lime juice
1/2 teaspoon hot pepper flakes
--------------------------------------------------------------------------------

Heat the oven to 325 degrees. Break the heads of garlic apart, then mash each clove (a fist against the side of a knife is what I do) to release the clove from its papery skin; if using already-peeled garlic, scoop the cloves into a heavy plastic bag and use a rolling pin to mash them slightly.

Stir together the garlic, oil and salt in an 8x8-inch baking pan (make sure all the garlic is submerged), slide it into the oven and bake until the garlic is soft and lightly brown, about 45 to 55 minutes.

Add the lime juice and hot pepper flakes and return to the oven for 20 minutes for the garlic to absorb the lime and turn golden brown. Using an old-fashioned potato masher or large fork, mash the garlic into a coarse puree. Pour the mixture into a wide-mouth storage container and refrigerate it until you’re ready to enjoy some deliciousness. The mojo will last for up to three months as long as the garlic stays submerged under the oil.

------------------------------------------------------------------------------------------------------

My house was enveloped in the aromas reminiscent of a fine Italian Trattoria.  After stealing a taste on a piece of bread, I knew whatever I had for dinner would simply be a conduit for this "the ultimate" condiment.

I spooned it over a steak, drizzled on grilled asparagus.....

...and schmeared it on crusty bread!

Hopefully, everyone else I come in contact with today, ingested an equally over indulgent amount of garlic or I will be spending a very lonely Sunday afternoon!  It will be worth it...but lonely, nonetheless!

TOMATO AND BASIL HUMMUS

TOMATO AND BASIL HUMMUS
I tasted this flavorful hummus recently during a supermarket sampling. The taste of this hummus was the best of both worlds, so delicious with chips. I have used roasted garlic and canned tomatoes here and substituted the tahini paste with extra-virgin olive oil. It gives a good taste combined with the basil and tomatoes. Even roasted tomatoes can also be used instead of the canned ones. I even added some green chilies for some heat. The chilies can be replaced with black pepper. Here goes the recipe:

INGREDIENTS:
Chick peas, 1 cup, soaked overnight.
Garlic, 1 small head.
Green chilies, small, 2.
Canned tomatoes, ½ cup.
Fresh basil leaves, a handful.
Salt as per taste.
Extra virgin olive oil, 2 tablespoons.

PREPARATION:
Cook the soaked chick peas until they are tender. I cooked the chick peas in pressure cooker for up to 2 whistles and let it cool. Drain out all the liquid from the canned tomatoes. To roast the garlic, cut the garlic head into two halves and apply olive oil to the halves. Wrap them in aluminum foil and bake it for 30 minutes. Squeeze out the garlic from the heads and keep aside. Add the cooked chickpeas, drained tomatoes, garlic, basil leaves, and chilies in a blender and blend everything into a smooth paste. Pour in extra virgin olive oil while blending. Add salt according to taste. Transfer the hummus into a serving dish and serve with tortilla or pita chips.

SANDRA’S SALMON STUFFED GRAPE TOMATO APPETIZER

A festive and vibrant appetizer
you can make ahead of time
to serve to your guests prior
to the main course...
Servings: 10
Yields 2.5 dozen
Prep: 30 Mins.

INGREDIENTS

30 ripe grape tomatoes

Filling:
3 ozs. lox (cured and thinly sliced Alaska salmon), finely chopped
1/3 cup finely chopped red onion
1/3 cup finely chopped red bell pepper
¼ teaspoon garlic granules
¼ teaspoon freshly ground pepper

Topping:
1 (3 oz. pkg.) cream cheese, softened
1 teaspoon milk
1 teaspoon freshly squeezed lemon juice
1 teaspoon finely chopped fresh dill (or ¼ teaspoon dried)
½ teaspoon paprika
Pinch of cayenne pepper

Garnish:
30 Capers
Halved lemon slices

METHOD

Cut a thin slice off the top of each grape tomato, and a very, very thin slice off of bottom (just so they stand upright when filled), scoop out and discard pulp using a ¼-teaspoon measuring spoon (being careful not to get too close to bottom), and invert tomatoes on paper towels to drain.

3 oz. pkg. of Fresh Lox
Meanwhile, in a small bowl use a spoon to fold the lox, onion, bell pepper, garlic granules, and pepper to combine.

Spoon filling into tomatoes using the same ¼-teaspoon measuring spoon.

In another small bowl, using a hand mixer beat cream cheese, milk, lemon juice, dill, paprika, and cayenne until smooth.

Insert a star tip into a pastry or plastic bag, and fill bag with cream cheese mixture; pipe a small amount on top of each tomato, and garnish with a caper.

Arrange the prepared tomatoes decoratively on a serving vessel, and place sliced lemon halves around them. ~ Enjoy!
